OK—we wouldn’t necessarily call Snug Bar a speakeasy, mainly because it doesn’t really try to hide its existence. That said, it still has all the trappings of an underground drinking destination. A secret location? Check. The Snug Bar is snuggly tucked away underneath The Cannery, and offers a quiet reprieve from the upstairs hustle and bustle. A warm and welcoming ambiance? Check. Bartenders who really know their stuff? Check. The place has killer libations—like the Cool Down, which is made with vodka, elderflower, cucumber, lime and soda, as well as an elevated gin-and-tonic that accentuates gin’s many flavor profiles with seasonally rotating ingredients—to boot. These drinks alone will make you feel like you’ve stumbled across a secret you’ll want to keep all to yourself.

Brad's take: Located on the water’s edge in Newport Harbor, The Cannery is Orange County’s best seafood restaurant. Chef Nick Weber makes pasta carbonara with lobster, but instead of bacon he uses bonito flakes to achieve a beguilingly smoky undertone. He serves raw scallops with flying fish roe and coconut milk. He slow-poaches abalone, then finishes it over oak charcoal before folding it into a velvety sea-urchin bisque. Octopus, too, benefits from the fire. A tangle of tentacles delivers a powerful escabeche-style blast of vinegar with sinus-clearing, tongue-numbing chile.

Best thing I ate this week: lobster carbonara like none other

The Cannery was recently named one of the best places to eat in Orange County.

Located on the water’s edge in Newport Harbor, The Cannery is a seafood restaurant where chef Nick Weber takes full advantage of a wood-burning grill. He slow-poaches abalone, sous-vide style, so that it becomes remarkably tender, then finishes it over oak charcoal before folding it into a velvety sea-urchin bisque along with light, creamy gnocchi and lumps of sweet potato. Octopus, too, benefits from the fire. A tangle of tentacles in varying shapes and sizes delivers a powerful escabeche-style blast of vinegar and sinus-clearing, tongue-numbing chili. The bouillabaisse, crab cakes, tuna tartare, grilled swordfish … all excellent.
